Vegetarian Crockpot Lentil Soup – Vegetable Soup


Simple and healthy are 2 things I look for when trying out new recipe for vegetable soup.

I ran across this easy veggie recipe for bean soup and it has become a family favorite, even for the meat eaters.

It’s loaded with tasty vegetables and tons of flavor.

This bean soup is so easy, you do a little veggie washing and chopping and toss it all into the crockpot!!

Bean Soup – Vegetable Soup

Ingredients:

  • 1 can garbanzo/red kidney beans
  • 1 bay leaves
  • 3/4 cup chopped onion
  • 3/4 cup chopped celery
  • 3/4 cup diced carrots
  • 3/4 cup lentils (dried)
  • 1/2 cup brown rice or barley
  • 1 can blended tomatoes
  • 2 tbsp lemon juice
  • 1 tbsp vinegar
  • 2 tbsp apple juice or honey
  • 1 tsp basil
  • 1 clove garlic
  • 3 large diced potatoes
  • 6 cups water or more

Directions:

  1. Put everything in crockpot for at least 5 hours on low.

Serve with corn bread for one of those delicious vegetarian meals.
Yield: Feeds 8 hungry people easily!
