It’s another one of those tasty vegetarian Italian recipes.
Ingredients:
- 1 cup water
- 2 tbsp margarine
- 1/2 tsp salt
- 1/4 tsp oregano leaves
- 1 1/2 cup mashed potato flakes
- 1/2 cup milk
- 1 egg
- 1 (9oz.) pkg frozen chopped spinach, cooked and drained
- 1 to 2 medium tomatoes, cut into 6 slices
- Parmesan cheese
Directions:
In medium saucepan, combine water, margarine, salt and oregano; bring to a boil. Remove from heat.
Add potato flakes, milk and egg; mix well. Gradually fold spinach into potato mixture until thoroughly combined. Place tomato slices in bottom of ungreased 13×9 inch pan. Mound 1/2 cup potato-spinach mixture onto each slice; sprinkle with cheese. Broil 4 to 6 inches from heat until cheese is slightly browned, about 5 minutes but watch closely.
Yield: 4- 6 servings

I ran across this easy veggie recipe for bean soup and it has become a family favorite, even for the meat eaters.
It’s loaded with tasty vegetables and tons of flavor.
This bean soup is so easy, you do a little veggie washing and chopping and toss it all into the crockpot!!
Ingredients:
- 1 can garbanzo/red kidney beans
- 1 bay leaves
- 3/4 cup chopped onion
- 3/4 cup chopped celery
- 3/4 cup diced carrots
- 3/4 cup lentils (dried)
- 1/2 cup brown rice or barley
- 1 can blended tomatoes
- 2 tbsp lemon juice
- 1 tbsp vinegar
- 2 tbsp apple juice or honey
- 1 tsp basil
- 1 clove garlic
- 3 large diced potatoes
- 6 cups water or more
Directions:
- Put everything in crockpot for at least 5 hours on low.
Serve with corn bread for one of those delicious vegetarian meals.
Yield: Feeds 8 hungry people easily!

This is one of my best vegetarian appetizer recipes. Also works great as a dinner meal.
Ingredients:
- 1 doz. small french rolls
- 1 lb. Cheddar cheese, grated
- 1 can black olives, chopped
- 1 (8oz.) can tomato sauce
- 1/2 cup salad oil 1 (4oz.) can diced green chilies
- 3 hard-boiled eggs, chopped
- 6 green onions, chopped
- 2 garlic cloves, chopped (optional)
Directions:
Cut roll in half; scoop out center on both side. Mix rest of ingredients and set in refrigerator for at least 1 hour. Mound mixture in half the roll and put together. Wrap in foil separately. Bake at 400 degrees in oven for 15 minutes. Serves 6.
