Hey Jessica – I have always made this particular recipe using cooked rice. I scanned a few of my favorite cooking sites and my main recipe site Cheap Family Meals for recipes using similar ingredients to this where you could just kinda toss everything in and cook. I’m not sure it will work but this is what I would suggest: use instant rice and you will have to increase the liquid amount (probably need to add water) to cook the rice. Let me know if this works!! ****Hey readers help us out – what do you think?****

Hi Patty, thanks for the support. There are so many great Vegetarian websites but because my family is a bit different having only 1 vegetarian, I found it difficult to find resources to feed the family as a whole. That is so funny, my family has thought the same many times. When I prepare a new meatless dish you can see the fear in their faces. Sometimes its a success, like this one and sometimes it doesn’t get touched. I’m glad you liked it and thumbs up for going low fat!!

I made this last night and it was really good! We’re not vegetarians, because my husband is pretty sure he would die, but I don’t think he even realized this was meatless!! Very good, and I used all low fat ingredients and it tasted super! Thanks!!
