Everyone living “a veggie way of life” needs tasty vegetarian recipes.
This is one of those meatless meals you have got to try, you won’t be disappointed!
Ingredients:
- 4 medium onions, sliced
- 3 tbsp. butter or margarine
- 2 tbsp flour
- dash pepper
- 3/4 cup vegetable broth
- 1/4 cup dry sherry (water may be substituted)
- 1 1/2 cup plain croutons
- 2 tbsp butter or margarine melted
- 1/2 cup shredded Swiss cheese
- 3 tbsp Parmesan cheese
Directions:
Cook onions in the 3 tbsp butter or margarine until tender, not browned.
Mix in flour and pepper then add broth and sherry and cook until thickened and bubbly. Turn into 1-quart casserole dish. Toss croutons with the 2 tbsp of melted butter or margarine. Spoon over top of onion mixture. Sprinkle with Swiss and Parmesan cheese. Place under broiler just until cheese melts, about 1 minute. Serve immediately.

This bean soup is so easy, you do a little veggie washing and chopping and toss it all into the crockpot!!
Ingredients:
- 1 can garbanzo/red kidney beans
- 1 bay leaves
- 3/4 cup chopped onion
- 3/4 cup chopped celery
- 3/4 cup diced carrots
- 3/4 cup lentils (dried)
- 1/2 cup brown rice or barley
- 1 can blended tomatoes
- 2 tbsp lemon juice
- 1 tbsp vinegar
- 2 tbsp apple juice or honey
- 1 tsp basil
- 1 clove garlic
- 3 large diced potatoes
- 6 cups water or more
Directions:
- Put everything in crockpot for at least 5 hours on low.
Serve with corn bread for one of those delicious vegetarian meals.
Yield: Feeds 8 hungry people easily!

Easy Vegetable Casseroles are a simple way to get dinner done in little time and without a big mess.
This is one of those easy vegetarian meals any day of the week.
Ingredients:
- 5 large onions, sliced
- 1 can (10 1/2oz) cream of mushroom soup
- 1 1/2 cups grated cheese
Directions:
Place 1/2 of the sliced onions in a casserole dish. Cover with 1/2 the soup and 1/2 of the grated cheese.
Top with remaining onions, soup and then cheese. Cover and bake in 350 degree oven for 50-60 minutes or until onions are tender.
